Financiers are classic French almond cakes made with brown butter, eggs, almond flour, and almond paste. Chloe Hodgman, pastry chef at The Girl & The Fig in Sonoma, California, shows how to make financiers elevated with two seasonal variations: chai and Anjou pear. These refined yet simple cakes are perfect for dessert, afternoon tea, or an elegant addition to any pastry spread.

Ingredients

  • 453 Grams Almond Paste, room temperature

  • 227 Grams Sugar

  • 227 Grams Butter, room temperature

  • 340 Grams Eggs

  • 170 Grams Almond Flour

  • 5 Grams Vanilla Paste

  • as needed Almonds, sliced

  • Flavor Options:
  • 1-2 ea. Red pear, sliced

  • as needed Chai spice blend

Directions

  • Combine all ingredients in mixer with a paddle attachment until completely homogeneous.
  • Add in any addition flavoring if desired, for example add the Chai spice blend.
  • Spray financier pan or molds very well before adding batter.
  • Then, add toppings such as sliced almonds and fanned out slice of red Anjou pear, if desired.
  • Bake at 325°F for 30-40 minutes or until completely set.
  • Let cool completely before removing from mold and portioning.
