Mango Sev Puri

PortionsSev Puri is a popular Indian street food, full of sweet, spicy, and tangy flavors. The sev, a crunchy garnish, is paired with the puri, crispy crackers that get all sorts of tasty toppings. Chef Toni Sakaguchi from The Culinary Institute of America uses mangos at various stages of ripeness in this recipe. The puri are topped with a mixture of Mango Tamarind Chutney, Green Chili Chutney, sev, cayenne, and cilantro.
Ingredients
½ cup Mango, ripe, peeled, small dice
¼ cup Mango, med ripe, peeled, small diced
¼ cup Red onions, small diced
2 Tbsp Cilantro, chopped, divided
½ – 1 tsp Cumin seeds, toasted, ground
1-2 tsp Chaat masala
1 each Cayenne, a pinch
as needed Lime juice
as needed Salt
½ cup Mango, green, peeled, sliced thin
- Ingredients
16 each Puris
as needed Mango Tamarind Chutney
as needed Green Chili Chutney
1 cup Sev
Directions
- Combine the diced mangos, red onions, 1 tablespoon of cilantro, cumin, chaat masala, cayenne, and lime juice in a bowl. Season with salt.
- Place the puris on a plate. Place a sliced green mango on top. Add a little of the Mango Tamarind Chutney and Green Chili Chutneys.
- Top with a tablespoon of the diced mango mixture.
- Sprinkle with sev, a pinch of cayenne, and more cilantro if desired.

Notes
- Puris are crispy semolina crackers, and sev are crispy chickpea noodles. Both can be found at Asian or Indian grocery stores.
