
Modern Balinese Desserts with Will Goldfarb
For something sweet, we head south to Seminyak, Bali’s coastal hub for luxury resorts. Here we meet with Will Goldfarb, who directs a tasting kitchen, lab, and pastry program at Ku De Ta, as well as WillPowder Specialty Powders and Spices. Known for his innovative, modernist, and whimsical desserts, Will Goldfarb has worked in the kitchens of El Bulli and Morimoto, and once owned Manhattan’s critically acclaimed Room 4 Dessert. Chef Goldfarb moved with his family to Bali in 2008. Above Ku De Ta and looking out onto the sparkling Indian Ocean, Chef Goldfarb’s new ultra-modern pastry laboratory is full of high-tech kitchen machinery. His kitchen lab is called Mejekawi, which means “sacred table.”
