Shakshuka is a North African and Middle Eastern dish made of stewed tomatoes and peppers. Although it’s traditionally enjoyed for breakfast in Israel, this dish really is great for any meal of the day. In this recipe we make a shakshuka with a green twist by using New Mexico chiles and spinach.

Ingredients

  • 1⁄4 cup Olive oil

  • 1 cup Green onion, minced

  • 1 Tbsp Garlic, minced

  • 1 Tbsp Cumin, ground

  • 1 Tbsp Red pepper flakes

  • 1 lb New Mexico green chile peppers, roasted, peeled, seeded, chopped

  • 1 lb Spinach leaves, chopped

  • 1⁄2 cup Cilantro, minced

  • 2 tsp Salt

  • 4 each Eggs, whole

  • Ingredients
  • 1⁄2 cup Feta cheese

  • 1⁄4 cup Chives, 1″ pieces

  • 1⁄4 cup Cilantro leaves

  • 1⁄4 cup Extra virgin olive oil

  • 2 each Pita bread, cut into wedges

Directions

  • Heat olive oil in a skillet on medium heat.
  • Add green onion, garlic, cumin, and red pepper flakes and sauté until translucent and aromatic, about 3-4 minutes.
  • Add the chile, spinach, cilantro, and salt. Cook the spinach until wilted, about 304 minutes more.
  • Using an immersion blender, blend about 1/2 the mixture. Stir to combine.
  • Create four wells in the mixture, using the black of a spoon, and add one egg to each well.
  • Cover and simmer on medium low until the eggs are just cooked through, but the yolks are still creamy.
  • TO SERVE:
  • Garnish with feta, chives, cilantro, and a drizzle of olive oil. Serve with warm pita wedges.
