Napa Valley, CA2018 WORLDS OF HEALTHY FLAVORS PROGRAM SUMMARY
During the 14th Annual Worlds of Healthy Flavors Leadership Retreat—presented in partnership with the Harvard T.H. Chan School of Public Health’s Department of Nutrition—experts and operator presenters shared insights ranging from personalized nutrition and epidemiology to consumer attitudes, menu language, and globally-inspired produce techniques. In 2018, for the first time, the retreat took place at the CIA’s newest location, Copia, in Napa, which joins Greystone in St. Helena in comprising the California Campus. The retreat delighted attendees with presentations, panel discussions, and delicious meals and receptions embodying the great possibilities of bringing together the best of world cooking with the latest in consumer and nutrition research.
Program highlights included: culinary demonstrations from lauded chefs based in Mumbai, India, and Baja California; a presentation by Datassential about attitudinal differences between operators and consumers around perceptions of protein; a guided glimpse into the evolving technology landscape of healthy eating and its implications for chefs and restaurateurs, provided by the Food Futures Lab; best practices from Healthy Aperture for connecting with diners through compelling food photography; and a checklist from Harvard Chan School researchers explaining the key markers of quality for scientific studies supporting optimal food choices, along with a companion checklist of sources of confusion about dietary guidance, or “things to watch out for” in navigating the noisy landscape of diet books, news headlines, blogs, and social media.
