Pork rib racks, St. Louis-style
- 2 Tbsp.
Salt
- 1 Tbsp.
Black pepper, ground
- 1 Tbsp.
Smoked paprika
- 1 tsp.
Cumin, ground
- 1 tsp.
Garlic powder
- 2 Tbsp.
Oil
Directions
Remove the membrane from the back of the ribs and pat dry.
Season evenly with salt, pepper, smoked paprika, cumin, and garlic powder.
Heat the oil in a large pan and sear the ribs until lightly browned on all sides.
Wrap the ribs tightly in foil and roast at 300°F (150°C) for 2½–3 hours, or until fork tender.
Unwrap and brush generously with warm mole negro. Return to the oven for 10–15 minutes, or finish on a grill, until the glaze is caramelized.
Rest for 10 minutes before slicing and serving on top of some additional mole negro.
