Pork Ribs with Mole Negro

    Ingredients

    • 2 each

      Pork rib racks, St. Louis-style

    • 2 Tbsp.

      Salt

    • 1 Tbsp.

      Black pepper, ground

    • 1 Tbsp.

      Smoked paprika

    • 1 tsp.

      Cumin, ground

    • 1 tsp.

      Garlic powder

    • 2 Tbsp.

      Oil

    Directions

    • Remove the membrane from the back of the ribs and pat dry.

    • Season evenly with salt, pepper, smoked paprika, cumin, and garlic powder.

    • Heat the oil in a large pan and sear the ribs until lightly browned on all sides.

    • Wrap the ribs tightly in foil and roast at 300°F (150°C) for 2½–3 hours, or until fork tender.

    • Unwrap and brush generously with warm mole negro. Return to the oven for 10–15 minutes, or finish on a grill, until the glaze is caramelized.

    • Rest for 10 minutes before slicing and serving on top of some additional mole negro.
