• High Protein Black Bean, Cocoa, Almond, Coconut Bites


    Yield: 30 1 ounce Bites

    • Ingredients
    • Almonds, blanched, toasted
      1 cup
    • Black beans, canned, drained, rinsed
      8 oz.
    • Dates, pitted
      ½ cup
    • Almond butter
      ¾ cup
    • Flax seeds, yellow, ground
      1 Tbsp.
    • Maple syrup or agave
      2 Tbsp
    • Vanilla extract (optional)
      ½ tsp.
    • Chocolate chips, mini
      ½ cup
    • Cocoa powder
      ¼ cup
    • Salt, a pinch
      1 ea.
    • Coconut, shredded, toasted, split
      ½ cup


    1. In a food processor, coarsely grind the almonds, remove 50% and set aside. Finely grind the remaining almonds. Add the dates and process until they are well incorporated. Add the beans and grind until smooth.
    2. Add the almond butter, flax seeds, maple syrup, vanilla, chocolate chips, cocoa powder, and a pinch of salt. Process until the mixture is smooth. Mix in the remaining coarsely ground almonds.
    3. Form into balls and roll in toasted coconut.
    4. Place on a parchment lined baking sheet.
    5. Store in the refrigerator or freezer.
