  • Yellowtail Ceviche with Avocado

    Ingredients

    4 cups. 4 portions

    • Yellowtail, skinless, small dice
      1 lb.
    • Red bell pepper, minced
      1/4 cup
    • Jalapeno, seeded, minced
      1 Tbsp.
    • Red onion, thinly sliced
      1/2 cup
    • Lime juice
      3/4 cup
    • Orange juice
      1/4 cup
    • Salt
      1 Tbsp.

    • Avocado, small dice

    • Cilantro, minced
      2 Tbsp.

    • Ingredients
      Amount
    • Corn on the cob, boiled, sliced into 1-inch rings
      1 each
    • Blue corn tortilla chips
      32 each

    Method

    1. Combine all ingredients for the ceviche in a bowl and stir to mix well. Cover with a piece of plastic wrap directly over the surface, pressing down to submerge all ingredients.
    2. Refrigerate for 1 hour.
    3. Drain away some of the liquid, and gently fold the avocado and cilantro into the mixture.
    4. Serve garnished with the corn and a side of tortilla chips
