  • Singapore Slaw

    Ingredients

    Ginger slaw dressing

    4 portions

      Amount
    • Ginger, minced
      1 Tbsp.
    • Garlic, minced
      2 tsp.
    • Rice wine vinegar
      ¼ cup
    • Soy sauce
      1 Tbsp.
    • Lime juice
      2 Tbsp.
    • Mirin
      1 Tbsp.
    • Sesame oil
      2 Tbsp.

    • Napa cabbage, cored, sliced thin
      5 cups
    • Farmland Smoked Ham, diced into ¼” cubes, sautéed

      2 cups
    • Red pepper, julienne
      1 cup
    • Serrano pepper, minced
      1 Tbsp.
    • Carrots, julienne
      1 cup
    • Scallions, cut on the bias
      ½ cup

    • Ingredients
      Amount
    • Cilantro, stemmed

      1 cup
    • Peanuts, toasted, crushed

      ½ cup
    • Black sesame seeds, toasted

      1 Tbsp.
    • Mango, diced

      1 cup

    Method

    For the dressing:

    1. In a small bowl, or food processor combine ginger, garlic, vinegar, soy sauce, lime juice, Mirin, and sesame oil.

    For the salad:

    1. In a large bowl, combine cabbage, both peppers, carrot, and scallions and toss to combine. Add enough dressing to coat and let sit for 10 minutes for flavors to marry.

    For the sautéed ham:

    1. Heat a large skillet over medium heat, add the olive oil and diced ham and sauté until nicely colored on all sides. Remove to a paper towel lined sheet pan and cool.

       

    To serve

    1. Add the ham, cilantro, peanuts, sesame seeds, and diced mango and toss again adding more dressing as needed. Serve garnished with more cilantro and sesame seeds.
