• Asian Spinach and Grape Salad


    Yield: 4 servings

    • Ingredients
    • Fresh spinach, washed
      4 cups
    • Boneless skinless chicken breasts, grilled and then diced
    • Cucumber, in half-inch chunks, peeled, seeded
      1 cup
    • Green California seedless grapes, halved
      1 cup
    • Frozen shelled soybeans (edamame), thawed
      ½ cup

    Sweet ginger dressing

    • Ingredients
    • Seasoned rice vinegar
      ½ cup
    • Fresh garlic, minced or pressed
      1 clove
    • Minced candied ginger
      1 Tbsp.
    • Vegetable oil
      4 Tbsp.
    • Toasted sesame oil
      ½ tsp.


    1. Combine all of the dressing ingredients in a blender and mix until smooth.
    2. In a large bowl, combine the spinach, chicken, cucumber, grapes and soybeans. Toss with the dressing and add salt and pepper if desired. Plate and serve immediately.
