While never diminishing our commitment to the
culinary profession and the art and craft of cooking,
collaborations with nutrition scientists, public health
experts, and government policy makers are an
increasingly important part of the CIA as we work to
improve the health and wellness of our nation. The
CIA develops strategies and solutions to increase the
presence—and success—of healthy menu choices
throughout the foodservice sector.
Food and nutrition issues impact the health of America's children and youth, and are some of the most pressing public health challenges of our time. The Culinary Institute of America (CIA), widely regarded as the world's leading culinary college, has long been committed to advancing healthier foods.
Each January, the Worlds of Healthy Flavors invitational leadership retreat brings together an audience of 125 people—including top nutrition researchers, influential corporate chefs, nutrition executives, world cuisine experts, members of the media, and other influencers—to discuss opportunities for presenting American consumers with a wider range of healthy menu options.
The CIA Healthy Menus R&D Collaborative is an initiative designed to take inspiration, information, and insights from other CIA health and wellness initiatives and craft highly targeted, sector-specific, practical solutions that contribute towards expanding healthy food and beverage choices within the foodservice industry. Members include a small "dream team" of volume foodservice leaders, technical experts, manufacturers, and suppliers.
An Annual Gathering of Physicians, Registered Dietitian Nutritionists, Nurses, and Other Healthcare Professionals; Hospital, Insurance, and Other Healthcare Executives; and Healthcare Foodservice Directors and Executive Chefs.
Whatever you call it and however you frame it, plant forward is one
of the most significant culinary mega-trends underway in America
and in global foodservice. It is changing how chefs think about
menus, flavor development, creativity, profitability, and their future customers.
