Appetites + Innovation Program Summary

With a focus on advancing culinary excellence, health and wellness, and cultures of innovation in retail foodservice, the CIA’s Appetites + Innovation 2017 meeting brought together over 50 senior culinary and business leaders in all sectors of prepared foods at retail at the CIA at Copia. Now in its second year, this meeting gave collaborative members a deep understanding of the evolving demographic, consumer, and business conditions that are shaping the current and future state of food service in retail settings, as well as strategies and skills with which to confront those dynamics and build thriving culinary cultures within their operations. Presentation topics included:

  • Current and future consumer trends and their impact on the retail industry overall
  • Member panels on the CEO mindset and the unique business needs of food service within the retail setting, including competing for attention with the center store business
  • Culinary demos highlighting plant-forward cooking and integrating local culture into prepared foods offerings
  • The increasing impact of rising health and wellness concerns, including menu labeling, and the benefits of in-store and corporate dietitian programs
  • A comprehensive overview of the full lifecycle involved in building a distinct and differentiated food service concept

Member representatives from organizations such as 7-Eleven, Giant Eagle, Albertson’s, Foodland, Price Chopper, and King’s & Balducci’s were joined by media from several industry publications as well as a host of marketing consultants, and partners from the manufacturer and supplier communities who supported the event. Participants concluded the three-day meeting with a working brunch, gathering in small groups to synthesize and apply learnings as they envisioned a comprehensive approach to building a next generation, differentiated, prepared foods-focused retail concept.
