• Grilled Mexican Green Onions with Romesco Sauce



    • Ingredients
    • Tomatoes
      4 ea.
    • Garlic
      1 hd.

    • Ingredients

    • Salt
      as needed
    • Marcona almonds
      2 oz.
    • Spanish olive oil
      ½ cup
    • Sweet pimentón
      ½ tsp.
    • Aged vinegar
      2 oz.

    • Mexican Green Onions
      12 ea.


    For the Sauce

    1. Roast the tomatoes and the garlic head until charred, once ready remove and peel. Place in a mortar or food processor.
    2. Add everything except the olive oil, pimentón and vinegar in a mortar or food processor and purée until a fine texture, remove, add olive oil, pimentón and vinegar.
    3. Place the green onions on top of the grill and cook until completely charred, place in a bowl and cover.

    To eat

    1. Peel the onions from top to bottom and dip into the sauce.
