
The Latin Flavors, American Kitchens Leadership Symposium is an annual invitational leadership retreat presented by The Culinary Institute of America that focuses on the world heritage of Latin cuisines, their future on American menus, and the advancement of Latin American culinary professionals.
The 2009 program highlighted the cuisines of Brazil, Chile, Puerto Rico, and Veracruz, Mexico.
The Latin Flavors, American Kitchens program examines strategies to advance opportunities for Latin American culinary professionals in the United States and consider approaches to increasing the appreciation of the world-class quality of many of Latin America's culinary traditions among the American dining public.
The program—an outgrowth of the launch of the CIA's campus in San Antonio, Texas, on the site of the historic Pearl Brewery—annually draws together leading experts in the food and cultures of Latin America, as well as many of the corporate chefs and other foodservice leaders in our industry who are best positioned to advance the future of Latin American culinary talent and Latin-rooted flavors.
Attendees of the 2009 symposium included more than 40 volume foodservice professionals and menu-decision makers from across the U.S. as well as 20 culinary professionals from Texas.
The 2010 Latin Flavors, American Kitchens Leadership Symposium will be held at the new CIA, San Antonio campus (to open Fall 2010) Wednesday, October 6 through Friday, October 8.
