Oysters with Soy, Ginger, Garlic and Chile
| Ingredients | Amount |

| Malpeque oysters | 12 ea. |
| Kikkoman Soy Sauce | 3 Tbsp. |
| Ginger, minced | 1 tsp. |
| Garlic, minced | ¼ tsp. |
| Red Thai bird chili, sliced or minced fine | 3 ea. |
| Lime, juiced | 1 Tbsp. |
| Scallions, sliced very fine | ¼ cup |
Method
Wash and shuck the oysters and loosen them from the shells, making sure not to loose any oyster liquor. Cover oysters and chill until service.
Combine soy sauce, ginger, garlic, chili and lime in a bowl; stir to combine. Reserve chilled.
Just before service, arrange the oysters on chilled plates. Stir scallions into soy sauce mixture. Spoon some of the soy sauce mixture over each oyster before serving, and serve the rest of the sauce on the side.
Note: When selecting oysters, choose oysters that do not have a strong briny flavor.
