Responding to an allergic reaction
Most people with severe allergies carry portable injectable epinephrine. It's not a restaurant's responsibility to have this medical equipment available or administer it. However, it is your responsibility to be able to respond to any kind of medical emergency, including choking, food poisoning, a heart attack, or a serious allergic reaction.
Have all appropriate emergency numbers on hand. Maintain a list by the phone. Instruct your staff in how to respond quickly to any emergency.
Never second guess an emergency. If a guest says he or she needs emergency assistance, call immediately.
