The Williams Center for Flavor Discovery
The Williams Center for Flavor Discovery is recognized as a leader in flavor development. Located at the CIA's Greystone campus, the international center studies culinary flavors and the dynamics of flavor in food and wine.
Through state-of-the-art sensory analysis technology and interaction with chefs, winemakers, and food producers, food and wine professionals have the opportunity to evaluate a broad range of flavor questions, such as:
- Can a customer tell the difference between fresh and frozen fish?
- Does the shape of a glass change the flavor of a wine?
- Can pastry chefs pair coffee with a particular dessert?
Session and tasting panel findings provide a collective understanding of flavor, wine, cooking, and agriculture. The Williams Flavor Discovery Center also features:
- Private 34-seat dining room following a "flavor-active" format (flavor interaction studied in a focus group setting)
- Plasma television monitors to assist in participant interaction/chef demonstration
- Flavor and product development test kitchen
