SAVORY CHEDDAR BACON SCALLION SCONES
| Ingredients | Amount |
|---|---|
| Flour | 1 lb. 14 oz. |
| Baking powder | 3 ½ Tbsp. |
| Salt | 1 tsp. |
| Sugar | 3 oz. |
| Sharp cheddar cheese, small dice | 6 oz. |
| Bacon, small dice, rendered | 10 oz. |
| Scallions, thinly sliced | 6 oz. |
| Cream | 1 quart |
| Polenta | 1 oz. |
Method
Fry the bacon and render it until it is crispy. Set aside and cool.
Mix the dry ingredients together and add the bacon, chives, and cheddar cheese.
Add the cream and mix until just combined.
Shape the dough into two 10 inch circles. Cut each circle into 10 wedges.
Brush the tops with the milk and sprinkle it with polenta.
Bake the scones in a 325°F oven for 18 to 20 minutes.
