COFFEE SHALLOT JAM
| Ingredients | Amount |
|---|---|
| Shallots, sliced thin | 6 ea. |
| Coffee, reduced by half | ½ cup |
| Olive oil | 2 Tbsp. |
| Currants, dried | ½ cup |
| Brown sugar | 1 Tbsp. |
| 5 spice powder | ½ tsp. |
| Salt | 1 Tbsp. |
| Pepper | |
| Lime juice, fresh | 2 tsp. |
Method
Sauté the shallots and currants in the olive oil until the shallots are translucent and golden.
Add the coffee and turn the heat to low and simmer for at least 20 minutes or until the mixture is thick like a jam.
Add fresh lime juice and adjust the seasoning with salt and sugar.
