COFFEE SHALLOT JAM

Ingredients Amount
Shallots, sliced thin 6 ea.
Coffee, reduced by half ½ cup
Olive oil 2 Tbsp.
Currants, dried ½ cup
Brown sugar 1 Tbsp.
5 spice powder ½ tsp.
Salt 1 Tbsp.
Pepper  
Lime juice, fresh 2 tsp.

Method

  1. Sauté the shallots and currants in the olive oil until the shallots are translucent and golden.

  2. Add the coffee and turn the heat to low and simmer for at least 20 minutes or until the mixture is thick like a jam.

  3. Add fresh lime juice and adjust the seasoning with salt and sugar.
