SMOKED TURKEY, ASIAGO, APPLE, SAGE SANDWICH WITH COFFEE SHALLOT JAM

| Multigrain rolls | 6 ea. |
| Smoked turkey slices, 2 oz. portion | 18 ea. |
| Braeburn apples sliced, 3 oz. portion | 18 ea. |
| Asiago cheese, thinly sliced | 30 ea. |
| Sage leaves, fresh | 18 ea. |
| Mayonnaise, with 1 tsp. of curry powder | to taste |
| Coffee Shallot Jam |
Method
Slice the turkey and lay out each portion on a sheet tray lined with parchment. Slice the apples and squeeze lime juice over the top to keep them from browning. Slice the cheese.
Spread a thin layer of mayonnaise, then coffee shallot jam on both sides of the roll. On one side of the roll, place the turkey, apple slices, sage leaves, and Asiago cheese. Top the sandwich with the other dressed side of the roll.
