AGED PORT CHEDDAR SPREAD
| Ingredients | Amount |
|---|---|
| Cheddar cheese, aged | ½ lb. |
| Aged port, flambé alcohol | ¼ cup |
| Currant jelly | 1 Tbsp. |
| Sage, fried and minced | 2 tsp. |
Method
Leave the cheddar cheese out at room temperature at least 2 hours before preparation.
In a food processor, whip cheddar cheese with port, sage, and currant jelly.
Serve in a clay crock with crackers.
