APPLE JACK RIBS SMOKED OVER COFFEE BEANS WITH COFFEE BARBECUE SAUCE

| Baby back pork spareribs, racks | 4 ea. |
| For the marinade | |
| Apple Jack liquor | 1 ½ cups |
| White sugar | 1 ½ cups |
| Salt | ¼ cup |
| Black pepper | 2 ½ Tbsp. |
| Paprika | 3 Tbsp. |
| Cayenne pepper | 1 tsp. |
| Fresh garlic, minced | 2 Tbsp. |
| Coffee beans | 1 cup |
| Coffee Barbecue Sauce | |
Method
Trim away any excess fat from ribs.
For the marinade: In a medium bowl, stir together the Apple Jack, sugar, salt, black pepper, paprika, cayenne pepper, and garlic. Rub spice mix all over the ribs.
Place the ribs in two 10x15 inch roasting pans, piling two racks of ribs per pan. Cover, and refrigerate for 8 or hours.
Heat up the grill to medium temperature. Once the grill is hot, place the ribs on the high rack and cook the ribs for 15 minutes before you turn them over; turn every 15 minutes. While the ribs are on the grill, periodically throw coffee beans over the hot burners to release a cool smoke to infuse into the rib meat.
After one hour keep of turning the ribs over every 15 minute, start basting with the Coffee Barbecue Sauce. Cook the ribs until they are tender but not falling off the bone.
