CRISPY SWEET POTATO FRIES

Ingredients Amount
Sweet potatoes, cut into French fries 2 lbs.
Canola oil 4 cups
Kosher salt 1 to 2 Tbsps.
Old Bay 1 to 2 Tbsps.
Cayenne Pepper ¼ to ½ tsp.
Sugar

Method:

Oil blanching method:

  1. Heat oil in a large pot or wok until it reads between 325°F and 350°F on a thermometer. Using a slotted spoon, add about ¼ of the potatoes (take care not to overcrowd the pot, otherwise the oil will cool) and fry. Fry until they are blistered and browned, about 4 to 6 minutes. Transfer them to a paper towel-lined plate and cool on a baking sheet.

Double fry method:

  1. When ready to fry again heat up oil to 350°F before frying the cooled batches of potatoes again. Once all of the potatoes are fried, transfer them to a bowl and toss with spices, sugar, and salt to taste.

  2. Serve while hot with steak and sauce.

Yields 6 to 8 portions
