CRISPY SWEET POTATO FRIES
| Ingredients | Amount |

| Sweet potatoes, cut into French fries | 2 lbs. |
| Canola oil | 4 cups |
| Kosher salt | 1 to 2 Tbsps. |
| Old Bay | 1 to 2 Tbsps. |
| Cayenne Pepper | ¼ to ½ tsp. |
| Sugar |
Method:
Oil blanching method:
Heat oil in a large pot or wok until it reads between 325°F and 350°F on a thermometer. Using a slotted spoon, add about ¼ of the potatoes (take care not to overcrowd the pot, otherwise the oil will cool) and fry. Fry until they are blistered and browned, about 4 to 6 minutes. Transfer them to a paper towel-lined plate and cool on a baking sheet.
Double fry method:
When ready to fry again heat up oil to 350°F before frying the cooled batches of potatoes again. Once all of the potatoes are fried, transfer them to a bowl and toss with spices, sugar, and salt to taste.
Serve while hot with steak and sauce.
