Blueberry Ginger Soda

| Blueberries | 2 cups |
| Palm sugar | ½ cup |
| Ginger, peeled and chopped | ¼ cup |
| Honey | ¼ cup |
| Blueberry juice | 2 cups |
| Lemon juice | ½ cup |
| Club soda | 2 cups |
| Ginger, minced | ⅓ cup |
| Blueberries, fresh | ½ cup |
Method
Make the blueberry ginger base: Combine the first four ingredients in a small saucepan and bring to a boil. Remove from the heat and chill.
Add the blueberry juice, lemon juice, and stir to combine.
Chill completely and strain into a container.
For each drink: Combine 4 oz of the chilled blueberry base in a shaker with ½ cup ice cubes, 2 tsp. minced ginger and shake to muddle. Strain into a chilled glass and add 4 oz. soda.
Garnish with a few blueberries.
Yield: 8 (8 oz.) drinks
