Blueberry Ginger Soda

Blueberries 2 cups
Palm sugar ½ cup
Ginger, peeled and chopped ¼ cup
Honey ¼ cup
Blueberry juice 2 cups
Lemon juice ½ cup
Club soda 2 cups
Ginger, minced ⅓ cup
Blueberries, fresh ½ cup


  1. Make the blueberry ginger base: Combine the first four ingredients in a small saucepan and bring to a boil. Remove from the heat and chill.

  2. Add the blueberry juice, lemon juice, and stir to combine.

  3. Chill completely and strain into a container.

  4. For each drink: Combine 4 oz of the chilled blueberry base in a shaker with ½ cup ice cubes, 2 tsp. minced ginger and shake to muddle. Strain into a chilled glass and add 4 oz. soda.

  5. Garnish with a few blueberries.

Yield: 8 (8 oz.) drinks
