Blueberry Ginger Soda
|Palm sugar||½ cup|
|Ginger, peeled and chopped||¼ cup|
|Blueberry juice||2 cups|
|Lemon juice||½ cup|
|Club soda||2 cups|
|Ginger, minced||⅓ cup|
|Blueberries, fresh||½ cup|
Make the blueberry ginger base: Combine the first four ingredients in a small saucepan and bring to a boil. Remove from the heat and chill.
Add the blueberry juice, lemon juice, and stir to combine.
Chill completely and strain into a container.
For each drink: Combine 4 oz of the chilled blueberry base in a shaker with ½ cup ice cubes, 2 tsp. minced ginger and shake to muddle. Strain into a chilled glass and add 4 oz. soda.
Garnish with a few blueberries.
Yield: 8 (8 oz.) drinks
