Ingredients
Amount
Cumin seeds
1/4 C
Black peppercorns 2 Tbsp
Whole cloves 1/2 tsp
Paprika 1/2 C
Ancho chili powder 1/4 C
Brown sugar 2 Tbsp
Cayenne pepper 1 Tbsp

 

 

Method

1. Toast the cumin seeds, peppercorns and cloves in a hot, dry fry pan until they are aromatic and slightly darkened. Cool.

2. Grind the toasted spices to a powder, then mix with the paprika, chili powder, brown sugar and cayenne. Store in an airtight container until needed.
