Yield: 4 to 6 portions

Ingredients
Amount
Western Griller, or Ranch Cut Steak
3/4 lb
Garlic cloves, crushed, optional 2 ea
Salt and black pepper to taste
   
Blue Cheese and Anchovy Dressing  
Garlic clove 1 ea
Anchovy fillets 4 ea
Red wine vinegar or balsamic vinegar 2 Tbsp
Dijon mustard 1 Tbsp
Oregano, fresh chopped 1 Tbsp
Black pepper 1/2 tsp
Extra virgin olive oil 1/3 C
Blue cheese (such as Danish Blue, Maytag Blue) 1/4 lb
Chives, minced 2 Tbsp
   
Grilled Pizza (recipe follows)  
Chopped chives or green onions for garnish  
Method

1. Rub steak with garlic and sprinkle with salt and pepper. Grill to medium, then let rest for 5 minutes. Cut across the grain into 1/8- by 2-inch strips and reserve.

2. To make the dressing: Put the garlic and anchovies in a food processor and process to a paste. Add the vinegar, mustard, oregano and pepper. With the motor running, pour the oil through the feed tube to make a creamy dressing. Transfer to a bowl and stir in the crumbled blue cheese.

3. Pour the dressing over the lettuces and the tomatoes and toss to coat. Add the beef strips on top and toss lightly to mix. Serve on a round of grilled pizza dough and garnish with chives or green onions.
