Wilted Spinach with Crispy Shallots
| Ingredients | Amount |

| Olive oil | 1 oz. |
| Baby spinach | 1 lb. |
| Shallots, fine dice | 2 oz. |
| Garlic, minced | 1 Tbsp. |
| Salt and pepper | to taste |
Method
Heat a sauté pan over medium high, add the oil and the shallots and garlic, sauté for 1 minute. Increase the heat and add the spinach. Toss to wilt. Season with salt and pepper.
