2012 PROGRAM SUMMARY

Flavor, Quality & American Menus is an annual invitational leadership retreat co-presented by The Culinary Institute of America and the University of California, Davis. Now in its ninth year, this invitation-only event provides a venue for networking, sharing of information and ideas, and advancing both American agriculture and the food and beverage industries that depend on it.

Attendees at the 2012 retreat included: more than 40 volume foodservice operators from chain restaurants, contract foodservice companies, supermarkets, and colleges & universities; more than 20 presenters including food writers paired with guest chefs from Brooklyn, Baltimore, New Orleans, Dallas, and Seattle; and sponsor representatives from the 26 companies and organizations supporting this event.

The 2012 program schedule included: presentations and culinary demonstrations focused on regional food and menu trends; a Friday field trip to Wolfskill Experimental Orchards, the Center for Land-Based Learning, and the Oxbow Public Market in Napa; and the popular Saturday Market Basket Exercise, where all attendees broke into teams to tackle the following five menu development challenges.

  1. Salads with Asian Influences
  2. Sustainable Seafood: Soups and Starters
  3. Cooking with Fire!
  4. Salads with a Latin Twist
  5. Inspiration from Italy: Pizza, Pasta, Polenta and Other "Cucina Pover" Foods
  6. Seasonal Starters: September in the Napa Valley

The program concluded with a Town Hall Forum to discuss the Market Basket team challenges as well as the challenges of "local" sourcing

We are already planning the 2013 Flavor, Quality & American Menus Leadership Retreat (to be held September 4-7, 2013) where we will once again feature food writers and chefs from 5-6 U.S. cities.
