Vietnamese Braised Pork
Yields 3 pounds

| Canola oil | 2 tablespoons |
| Shallots, chopped | 3 tablespoons |
| Garlic, chopped | 1 tablespoons |
| Five-spice powder | 1 ½ teaspoon |
| Dried chili, ground | to taste |
| Soy sauce | 1 tablespoon |
| Sugar | 2 teaspoons |
| Pork leg, skin on, trussed in pieces 2 ½" wide by 10" long | 3 pounds |
Method
- Heat the oil in a medium skillet over moderate heat. Add the shallots, garlic, soy sauce, and sugar and stir until fragrant, about 10 seconds.
- Add the pork roast and brown. Add five-spice powder, dried chili, and star anise powder. Add enough stock to almost cover. Cover with a lid and braise until tender, but still holds its shape, approximately 1 to 1½ hours. Chill.
