Vietnamese Braised Pork

Yields 3 pounds

Ingredients Amounts
Canola oil 2 tablespoons
Shallots, chopped 3 tablespoons
Garlic, chopped 1 tablespoons
Five-spice powder 1 ½ teaspoon
Dried chili, ground to taste
Soy sauce 1 tablespoon
Sugar 2 teaspoons
Pork leg, skin on, trussed in pieces 2 ½" wide by 10" long 3 pounds

Method

  1. Heat the oil in a medium skillet over moderate heat. Add the shallots, garlic, soy sauce, and sugar and stir until fragrant, about 10 seconds.
  2. Add the pork roast and brown. Add five-spice powder, dried chili, and star anise powder. Add enough stock to almost cover. Cover with a lid and braise until tender, but still holds its shape, approximately 1 to 1½ hours. Chill.
