Whether it is the art of couscous in North Africa, mastering spice traditions in India, techniques for roasting and using chiles in Oaxaca, best culinary practices among Thai street food vendors, cheese-making in Sicily, or the secrets of Southern U.S. barbecue, the World Culinary Arts Series presents the gold standards of a particular world culinary tradition. Step-by-step videos explain relevant techniques, variations and cultural contexts, building a library that effectively preserves these traditions for our industry and future generations of chefs, food writers and culinary enthusiasts.
At the core of The World Culinary Arts DVD & Internet Project: Savoring the Best of World Flavors is a focus on and multi-layered examination of selected iconic recipes of a given country—recipes that when well understood provide a window into the whole of that country's food culture.
This initiative complements and is an outgrowth of the entire family of CIA Worlds of Flavor programs, including the college's flagship Worlds of Flavors International Conference & Festival (now in its ninth year), Worlds of Flavor Online and the Worlds of Flavor Travel Programs.
The DVDs in this series, and the accompanying Podcasts, are distributed free of charge on a sponsored basis to selected influential chefs, operators and news media representatives.
